Psyllium Husk and Flaxseed Meal Pancakes

Psylliuim and Flaxmeal Pancakes

  Splenda 2 tsp 1 0 0 0 0        
  Eggs 2 each 140 6 0 10 6        
  Baking Soda 1/2 tsp         0        
  Cream of Tartar 1/4 tsp         0        
  Heavy whipping cream 2 Tbsp 102 1 0 6 1        
  Silk Almond Milk Unsweetened ~3 Tbsp 3 0 0 0 0        
  Total (4 Pancakes)   350 21 11 18 10        
  Per serving   88 5 3 5 3        

 

 

  • Combine all ingredients except Silk Almond milk
  • If desired, add slivered almonds, blueberries or other treats, depending on the ladder rung you are on.
  • I like to make a savory pancake by adding sauteed mushrooms, onions, garlic, chilis, sausage or chorizo.
  • If the batter is too thick (it will be), add 1 Tbsp pf Silk, incorporate and continue until batter is has the desired consistency
  • Cook on a griddle or frying pan lightly coated with oil over low heat.  (I use a setting of three out of ten on my stove top.)
  • Check and turn over at about 5 - 7 minutes.
